Striking striped wallpaper and varnished floorboards make an eye-catching statement at the Nightingale, where contemporary boutique chic mingles with Victorian style for a hotel with personality. A chandelier-lit dining room with white linen is the sophisticated setting for cooking founded on exciting combinations and bold flavours.

Start with punchy, crunchy tequila-macerated cactus tostada with guacamole, pickled kohlrabi and salsa ranchero and you’ll feel a long way from the Isle of Wight. Mains might be duck breast crusted in onion seeds with vanilla-scented pearl barley, baby aubergines, and grapefruit-coriander sauce. A DIY dessert involves melting down a white chocolate orb by pouring warm raspberry syrup over it – as you do.
